Hey there, I’m Craig! Welcome to Craig’s Green Table (formerly Craig’s Curls), my home for plant-based recipes and cooking techniques. If you’re a fan of eating food that’s both yummy and good for you, you’ve come to the right place. Around here, I mix the best of both worlds: timeless flavors and a nod to healthier living.
I work rather passionately to push every meal I make farther and farther in the direction of health-promoting. If I can thicken something with beans, a few nuts, and/or blended corn, you bet I’m going to do it that way!

What I’m All About
Plant-based cooking is my jam. I call my style “Balanced Plant-Based Cooking.” It’s about mixing those carefully crafted, rich, vegan flavors with some whole-food goodness. I’m not a stickler for rules, but I do give a lot of thought to what goes into my dishes.
Don’t expect a zillion recipes from me, but the ones you’ll find here are pretty well thought out—each one is like a little project for your tastebuds and belly.

As a curious culinary enthusiast, I enjoy exploring and experimenting with ingredients, sometimes including those used by companies such as Impossible Foods and Beyond Meat, such as methylcellulose, which is a processed plant cellulose that can be used to achieve a cooked sausage-like chewiness. I’m also often adding minimally processed foods like rehydrated rice paper or my homemade walnut butter to recipes to ramp up the whole foods indulgence! This helps me create unique and innovative dishes that excite the palate and push the boundaries of traditional plant-based cooking.

You know those dishes that used to make your house smell like heaven when you were a kid? Well, I like to take those old-school flavors and give ’em a plant-based makeover. It’s like comfort food gone green!

What I love doing is taking familiar recipes and flipping them on their head—plant-based style. So you’re basically getting the classics but with a fresh, modern touch. It’s like paying respects to the home cooks and culinary greats who came before us, but with a bit more green.
