Golden Chickpeas and Coconut Broth πŸ’›

Coconut milk is very rare in my cooking these days. You're more likely to find me blending coconut water with cashews to make my own thang πŸ˜‹ But... I figured I would try this out to see if the extra plant fat might calm my wild hunger. Just finished dinner and I'm definitely not hungry at the moment, so... yay! ☺️

Another great rec from @thetwopeas22, thank you! Oh, I added water chestnuts because they caught my attention when I was getting the coconut milk, and if nothing else: more liquid. I adore the crunch of a water chestnut. Also, I swear the red chillis that seem so available in the UK are virtually non-existent in the US, so I ended up adding big pinches of crushed red pepper flakes. 🌢️
