It's a real fiesta Mexicana over here!! 💚

How I made it easier: homemade frozen tamal, precooked frozen pinto beans, frozen corn, batch precooked rice! While reheating those, I chopped veggies to run this through the garden: tomatoes, lettuce, white onion, avocado. Topped with homemade chipotle ranch, a little salsa, and parsley because PARSLEY! 🌿

My gut microbiota is going to have a fiesta with this, too 🪇
