On a related note, part of the reason I landed on this recipe is some weirdo cooking experiments, I mean... kitchen creativity, that I've been daydreaming about with yellow split peas and nuts. I cultured a blend, and dang if it didn't have funky cheesy notes to it. Then a research article popped up in my news feed about yellow split pea protein cheese, so I figured I was on the right path.
